Title: Sweet & Sour Beets

Yield: 4 Servings

1/2c;water
1/4cVinegar
2tsCornstarch
4tsSugar
2cBeets; sliced, cooked

In a saucepan, combine water, vinegar, and cornstarch; bring to a boil. cook and stir for 1-2 minutes, remove from the heat. Add sugar and beets, let stand for 1 hour. Heat through just before serving.

Diabetic Exchanges: One serving equals 2 vegetable; also, 49 calories, 37 mg sodium, 9 cholesterol, 12 gm carbohydrate, 1 gm protein, trace fat.
